ONE OF THE MOST POPULAR ENTRÉES AT OUTBACK STEAKHOUSE is their Alice Springs Chicken. Seriously, what’s not to like about a juicy chicken breast topped with tender cooked mushrooms, melty cheese, and crumbled bacon served with a honey mustard sauce? My version is a quick, easy, and ridiculously tasty variation of this famous dish. By keeping the same marvelous taste and losing 75% of the fat, I’ll spring for this one any day.

Makes 4 Servings

4 boneless, skinless chicken breasts (about 1 pound)
1 tablespoon Dijon mustard
1 tablespoon light mayonnaise
1 tablespoon honey
2 teaspoons vinegar
2 teaspoons butter
1 (8-ounce) package sliced
mushrooms
Black pepper, to taste
3/4 cup shredded reduced-fat
cheddar cheese
8 teaspoons real bacon bits
1/4 cup sliced green onions tops

1. Cover the chicken breasts in plastic wrap and gently pound to 1/4-inch thickness. For the honey mustard, in a small bowl, whisk together next 4 ingredients (mustard through vinegar). Set aside.

2. Melt the butter in a large nonstick skillet over medium heat; add the mushrooms and cook for 7 to 10 minutes, or until they are tender and browned. Remove from pan and set aside.

3. Coat the skillet with nonstick cooking spray and turn heat to medium-high. Add chicken to the pan and cook for 3 minutes, or until underside is golden brown. Turn, and top each breast with 1/4 cup mushrooms. Add black pepper to taste, and sprinkle each breast with 3 tablespoons cheese and 2 teaspoons bacon. Add 2 tablespoons of water to the pan and immediately cover. Cook for 2 minutes, or until cheese is melted and chicken is cooked through.

4. To serve, top each breast with 1 tablespoon green onions, and drizzle with a scant tablespoon of the honey mustard sauce.
