Chocolate waffles are great for breakfast or dessert. You can top them with fresh fruit, maple syrup, your favorite ice cream, or, for a really decadent finish, drizzle them with chocolate sauce.

Yields about 16 waffles

3 cups all-purpose flour
6 tablespoons granulated sugar
1 cup cocoa powder
2 teaspoons baking powder
2 teaspoons salt
1 teaspoon baking soda
6 large eggs, beaten
2 teaspoons vanilla extract
2 cups buttermilk, plus more if needed to thin batter
1/2 cup (1 stick) salted butter, melted
Chocolate sauce, for garnish (optional)

1. Combine the flour, sugar, cocoa powder, baking
powder, salt, and baking soda in a large bowl.

2. Whisk the eggs, vanilla, and buttermilk in a separate
bowl.

3. Add the egg mixture to the flour mixture and mix until all the wet ingredients are incorporated into the dry.

4. Mix in the melted butter.

5. If the batter is too thick to ladle, thin it with some
extra buttermilk.

6. Bake in a Belgian waffle iron, according to
manufacturer’s directions. Garnish with chocolate
sauce, if desired.
