SOUR CHERRY OLD-FASHIONED

Bourbon drinkers usually take this classic cocktail on the rocks with a garnish of cherries. This version adds a splash of maraschino liqueur for an extra hit of sweet-tart cherry flavor.

MAKES 1 SERVING

1 sugar cube or 1 teaspoon granulated sugar
2 to 3 dashes Angostura bitters
2 ounces / 60 ml rye or bourbon whiskey
2 boozy Maraschino Cherries (see below), plus 1⁄2 ounce of their infusing liqueur
1 strip orange peel, white pith removed

Place the sugar in the bottom of an old-fashioned glass, add the bitters and a tiny splash of water (no more than 1 teaspoon), and muddle the mixture until the sugar dissolves. Fill the glass with ice and pour in the whiskey and cherry liqueur. Serve, garnished with the cherries and the orange peel.

Boozy Maraschino Cherries
Makes about 3 (8-ounce / 240 ml) jars

1-1/2 pounds / 680 g sour cherries, stemmed and pitted (3 to 4 cups)
3 cups / 710 ml maraschino liqueur, such as Luxardo
Divide the cherries among 3 sterilized (8-ounce / 240 ml) jars. In a large, nonreactive pot over medium-high heat, bring the liqueur to a boil. Pour the hot alcohol over cherries. Wipe the rims of the jars and apply the lids and bands. Store the cherries in a cool, dark, dry place for at least 1 month before opening. Refrigerate after opening.
